This bar combines the sweet and sour of Valrhona’s Yuzu Inspiration couverture with the savoury and umami of roasted black sesame.
The Yuzu citrus originates from remote mountains in Japan. A taste of this chocolate is truly an experience in of itself! I created a black sesame ganache as the center of this bar and it’s honestly extraordinary.
Not sure when Tyler is going to take over flavour development but maybe I’ll be out of a chocolate job by next year
